I'm processing an old Vertex (Yaesu) radio(FLT-#011), and it has a variable number of channels (4/8/12/16/24) depending on the upgraded epprom size (stored also on a epprom position)

So I need to update that on run time, did you worked out a case like this on Chirp? what model ? (to learn from)

I don't know of another one that varies by size. However, you could always allocate the full size (24) and then only write the correct number of channels into the radio right?
