I spotted this bug that's been resolved (https://chirpmyradio.com/issues/6403), but don't see which model we should use now.

I can read from the HT using Model UV-82HP, but when I try to upload to it the Model dropdown list is grayed out, inactive.

It's greyed out because it's already set to UV-82HP.
