Richard, why not install Python 2.7 and be done with it? Edit your sources list and you will receive the updates like you did before.

This isn't anything Ubuntu or Debian based, it uses the platform defined in the flatpak configuration file, in this case:

Which worked previously although this platform/sdk is depreciated for the same reasons chirp was removed from some distros. Python 2 EOL.
