First I would suggest trying out the latest daily.
Second, for mac, if you have chinese cable, it's probably fake PL2303. The official mac driver might look like its working, but nothing really happens. (At least on windows, you get the yellow icon and code 10.)
Thirdly, with the chinese radios, sometimes they need to be factory reset to work properly. I suggest taking a backup w/ "good" oem software, then resetting radio, then attempting to download that "default" image into chirp.
If the cable works on windows w/ oem software, but does not work with same cable on windows w/ latest daily chirp, then there may be a bug with chirp and your radio. In that case, please follow this guide and open a bug:

OK, I'm using the latest Stable release (not the daily) on all three
machines.
The cable, though it appears to be recognized by Chirp does not
work. When I say "recognized", I mean Chirp seems to be
downloading/uploading when I tell it to but no data is actually
transferred either way.
The light falshes on the radio as it does with the TYT software but
no data is actually transferred.

Sorry David,
I'm
still not quite following.
Are you
saying the cable works ok with stock programming software on
windows, but will not work with chirp on windows?
If so, can
you confirm you are using the latest daily release of chirp?
If this is
not so, please be explicit with where this is working and
where this is not working, to include which OS and programming
software you are using for each combination.
I have Windows 7, a late 2007 iMac or an Ubuntu
13.10 machine to choose from.
The cable works as expected on my Windows 7 machine
and it seems to be detected by my Mac and Linux
(using the "dmesg | grep tty" command from a
terminal.
While useful, the "stock" programming software
leaves a LOT to be desired.
