The "rig settings" that are support by CHIRP varies by what setting
the radio has available and by what the developer(s) for that radio
decided to implement. It seems that the developer(s) for the radios
you have only chose to support the most basic per-channel settings
plus the bank settings.

The CHIRP repository has CHIRP Radio Images (*.img) files saved there
for many of the CHIRP supported radios models. All you have to do is
download a few of the many images (106) for the most popular radio
models. Loading any of them into your copy of CHIRP will allow you to
see the "rig settings" that are supported by each image.

Loading the image for the BTech UV-5X3 would demonstrate CHIRP's
support for this radio by displaying 6 tabs of settings (nearly every
feature that can be manipulated using software).
